The Greatness Of Gumbo
By Sonia SoodPerhaps nothing is better known as a staple of Cajun cuisine than gumbo, a spicy, hearty stew or soup whose name literally means "okra". Called one of the greatest contributions of Louisiana Cajun kitchens to American cuisine, it came to that state with the first French settlers, who loved bouillabaisse, a highly seasoned French stew. Unable to find their usual ingredients to make bouillabaisse, they substituted local ingredients such as shrimp, fish, and okra. After a century mixing with Spanish, African, and native cuisine in the region, the step was no longer recognizable as its French precursor and was instead something completely new - gumbo.
Still extremely common in Louisiana, gumbo is also found all along the Gulf of Mexico, and is often eaten in the cooler months, when the extended cooking required to make the usually large batches of the dish will not heat up the room to uncomfortable levels.
Gumbo consists of two main components - rice and broth. The two are mixed together only for serving, and while new rice must be prepared daily, broth can be frozen and saved for future consumption.

Outback Steakhouse's Alice Springs Chicken You Can Make on Your Barbie
By Mark Hester Outback Steakhouse is a casual dining American restaurant chain with over 900 locations in 23 countries throughout North and South America, Europe, Asia, and Australia. It specializes American cuisine, with Creole influences served in a faux-Australian-inspired environment. All meat is heavily seasoned, including a 17 spice blend for the steaks themselves. Most seafood items are served with a Creole remoulade sauce.
Outback bills its food as "full flavor". This means it fries its food in vegetable shortening and uses real butter and heavy cream in many dishes. Healthy it's not.
But is is good.
The Alice Springs Chicken is one of the most popular items on the menu and now you can make it at home.

Seven Smart Ways To Prepare For The Upcoming BBQ Season
By L. Moses That's right it's almost BBQ time again. Now's the time to start preparing, before it's the Fourth of July and time has gotten away from you! Here are seven great tips to get the season started off right.
Tip #1 Clean your grill. Use a pipe wire cleaner or wire brush to make sure that the grill is free of rust, dirt, spider-webs and other debris.
Tip #2 Examine all hoses leading from the tank to the burners. Replace if cracked or damaged.
Tip #3 Find any leaks by applying a 50/50 solution of water and dish soap to propane cylinder connections and hoses. If bubbles appear, tighten the connection and or replace the damaged parts and retest.
